这几天也有很多人问我鱼丸的做法,而我鱼丸的做法也是跟着爷爷学的,所以今天我要教大家 *** 纯手工鱼丸。而鱼丸的做法不是大家想的那么简单,只需要将鱼肉搅一搅拌一拌就能做的又香又嫩,是需要掌握特别关键的几点技巧才行。而我今天教大家的 *** ,也不是特别难,只需要大家认真看把这篇文章看完,大概需要3分钟的时间,相信大家认真看完后都能做出又香又嫩,一点都不腥,比买的更好吃的鱼丸。希望大家看完后,都能做出正宗的湖北鱼丸!
鱼丸
食材准备:鱼肉250克、蛋清1个、淀粉20克、大葱10克(或小葱)、生姜10克、食盐适量、冰水5 0ml。

1、首选将鱼肉放入到清水中浸泡1小时左右,直到鱼肉变的非常白即可捞出。将鱼浸泡1小时,可以使鱼肉中的血水浸泡出来,这样就能使做出来的鱼丸非常白!
2、然后将鱼肉放入到绞肉机,将鱼肉搅拌成碎末即可捞出备用。如果家里没有绞肉机中,也可以用刀将鱼肉一层层的刮下来,也可以用刀将鱼肉剁成剁成碎末!
3、将生姜、大葱清洗干净,然后放入到搅拌机中,同时加入100克的冰水到搅拌机中,然后将它们搅碎,接着进行过滤,留水备用即可。
4、将一半的葱姜水放入到鱼肉中,搅拌均匀后,再将另一半的葱姜水放入到鱼肉中,继续朝一方向搅拌10分钟,直到鱼蓉搅拌为如下图所示的状态即可。
5、然后将蛋清、淀粉、食盐放入到鱼蓉中,在朝一个方向搅拌10分钟,感觉鱼蓉非常软后,捏一个鱼丸放入到水中,如果鱼丸能浮起来,就代表鱼丸打好了。
6、锅中放入适量的水,然后将鱼蓉挤成鱼丸,接着开大火,将鱼丸煮熟后,淋上一点香葱和白醋即可食用。

做鱼丸的3大诀窍:
1.搅拌葱姜水时,需要用冰水,因为搅拌鱼蓉时,鱼肉的温度会升高,如果温度过高,会导致做好的鱼丸吃着不鲜不嫩,而用冰水,可以防止鱼肉温度升高!
2.搅拌鱼丸时,食盐不可以最后放,因为食盐放的过晚,会导致鱼肉吸收不了水,这样就会使鱼肉不嫩!
3.煮鱼丸时,需要锅中放适量的水,然后将鱼丸挤在锅中一起煮,不可以一煮一边挤鱼丸,这样会导致鱼丸受热不均匀而破碎!
