1、做蛋糕选用新鲜一些的鸡蛋比较容易打发,如果是刚从冰箱里拿出来的鸡蛋要事先晾至常温,小贴士:土鸡蛋个头以及蛋清含量比较少,普通鸡蛋来说可以打发的更快。
2、盛蛋清的容器必须是干燥无水无油的,而且蛋清里面不要掺杂进去蛋黄,这样都会影响打发。
3、接下来就是蛋白霜打发的问题了。很多蛋糕失败的原因就是蛋白霜打发的不到位。
打发蛋白霜分为湿性打发、中性打发、干性打发,还有一种就是打过了。
湿性打发:提起蛋白霜有一定的形状,基本上是一个有长度的弯角的形状,呈现出大大的弯钩状,泡沫不会粘在盆上。
中性打发:等湿性打发之后慢慢就会过度到中性打发,相比较湿性打发而言,中性打发的弯角要小很多。
干性打发:打发到提起打蛋器呈现出直立的尖角就是干性打发了,打发好的蛋白霜细腻有光泽,能够粘在盆中,倒扣不会掉落。
干性打发是做蛋糕更好的状态,如果再接着往下打就打过了。
4、蛋白霜打发好之后要尽快和蛋黄糊混合均匀,这里一定要注意手法,用我们平时炒菜的方式翻拌均匀,这样不容易消泡,从蛋白霜打发好的那一刻就已经开始慢慢消泡了,所以这里手法一定要快而且均匀。
5、混合均匀之后震动三下,震出里面的大气泡。
烤箱做蛋糕:
1、如果烤箱做蛋糕,打发蛋白霜的时候就要开始预热烤箱,不能烤箱预热好了,这边还没把蛋白霜打发好,这样很影响效果,烤蛋糕的时候中间不能把蛋糕拿出来,不然表面会不平整。
2、烤完之后镇一下震出热气,倒扣晾凉就可以了。
电饭煲蛋糕
1、用电饭煲做蛋糕和烤箱一样都需要预热,空锅预热两三分钟。
2、老式的电饭煲没有蛋糕功能,内胆抹油倒入蛋糕糊震出气泡之后选择普通的煮饭键就可以了,出气孔的位置盖上湿毛巾,如果中间跳闸了就在开一次按钮,做完之后拔掉电源闷上20分钟左右就可以了。

2个鸡蛋、面粉、葱花、1根火腿

图省事就一口气把食材混合在一起!(2大勺面粉(大概70g)、2个鸡蛋半勺盐、半勺糖、2勺葱花、半根火腿肠粒、小半碗水(125g))
有个小技巧:鸡蛋可以先打匀再放进去,这样更好拌匀,拌好的面糊是比较稀的。
平底锅放油烧热,保持小火,舀两勺面糊摊成薄饼,煎好一面再翻面。
