猪肉、料酒、生姜、小葱、生抽、鸡蛋、橄榄菜、香菜、馄饨皮、食盐




4、包小馄饨要选三分肥七分瘦的猪肉,自己斩出来的口感更好。把斩好的肉糜放入碗中腌制一下,先放入一勺食盐、料酒、生抽、提前挤好的葱姜汁,然后朝一个方向搅拌均匀




5、葱姜水要分三次打到肉糜里面去,让肉糜充分吸收葱姜水,打到起黏性,再放入一个鸡蛋,继续搅拌均匀,这样肉糜更加嫩滑,肉馅不容易散开,这样小馄饨的肉馅就做好了



6、小碗中再放入点橄榄菜,熬葱油放入橄榄菜,有一种特别的香味,做好的小馄饨汤汁非常好吃。再把提前洗干净的小葱和香菜切小段来熬葱油。锅中倒入大豆油,先把香菜和小葱放进去,把香菜和小葱熬到微焦

10克生姜切成片,一节放入碗中,加入一颗掰开水浸泡20分钟,泡出葱姜水。今天花15块钱买了一块分肥七分瘦的猪肉,把猪肉改刀,余猪皮,猪皮比较硬口,然后切成小块成肉馅,用刀剁出来的这样就可以了。装入一勺食盐、一勺鸡精、白胡椒粉、一勺鸡精抽、一勺蚝油,再加泡好的葱姜水分两次拌均匀,朝着一个方向搅拌均匀,再第二次加入葱姜向搅拌均匀,使肉馅再出来的肉馅才会鲜嫩多。

入适量的食用油,少许一个方向搅拌均匀,锁前准备好的葱花加进来,这个肉馅就调好了,先个紫皮洋葱切成丝,再大葱切成片,20克生姜几个大蒜也切成片,然后把它们放一起剁不要剁的太碎,像视频中那样。

首先准备一块大约300克左右的前夹肉,做馄饨选用这个部位的肉,吃起来比较嫩,口感也是很好的,然后先把肉改下刀,先切成薄一点的片,尽量切的薄一些,这样也方便下一步的操作,接着在剁成肉末,如果不喜欢手工来剁,也可以使用绞肉机来处理一下,但是我认为还是手工剁处理的肉馅吃起来会更香,口感也会筋道,大概剁成像这样的程度就可以了,下面先把肉馅放入一个大碗里面,下面来调个味,加入半勺食盐、半勺鸡精、一点点胡椒粉、一点料酒去腥,一点生抽酱油、最后在加入一点葱姜水,不需要多,只需要一点点就可以了,下面使用勺子搅拌一下,把里面的调料都搅拌均匀,一直把葱姜水都吃进肉馅里面去,这样调出来的肉馅鲜香又滑嫩,吃起来也没有腥味,一直把肉馅调到这样发粘拉丝的状态就可以了,先放一旁腌制10分钟。


下面兑一个汤料,准备两根小葱,切成葱花,切好之后放入大碗中,香菜在来两三根,切成小段,如果不喜欢吃香菜的朋友,也可以忽略这一步,切好之后放入大碗里面。加入少许食盐、少许鸡精、不喜欢可不放,一点生抽酱油,在加入一点虾皮,紫菜在加入一点,




下面准备一些馄饨皮,如果买不到也可以自己来擀,先使用小勺子取上一点肉馅,放在馄饨皮的中间,然后在用手指蘸一点水,涂抹在馄饨皮的边缘,接着在对角对折,把边缘按实一下,这样更容易黏合不露馅,然后在调一个面,两个边角在涂抹一点水,接下来在将两角粘连按实一下,轻轻的按一下就可以了,这么一个元宝馄饨就做好了,10秒钟一个,非常的简单快速。馄饨包好之后先放入一个干燥的盘子里面,
