鲫鱼汤的营养非常的丰富,含有丰富的蛋白质,经常喝鲫鱼汤,可以补充我们人体需要的营养成分,那么鲫鱼汤该怎么做才不腥,而且汤白如牛奶呢?今天就来给大家分享一道鲫鱼汤的详细做法,按照这个 *** 做出来鲫鱼汤,不但汤白味美,一点腥味也没有,而且一根鱼刺也没有哦!家里的老人小孩都可以放心的食用。

今日美食:鲫鱼豆腐汤

食材:鲫鱼3条、豆腐一块、白玉菇100克、青豆100克、葱姜各20克。

调料:食用油、食用盐、胡椒粉、白糖

详细做法:

首先我们准备三条宰杀好的鲫鱼,先用刀把鲫鱼身上的粘液刮出来,鲫鱼身上这个粘液非常的腥,如果不给它刮掉做出来的鲫鱼汤腥味就会很重。

全部刮好之后我们给它放入一个大碗中,然后再加入多一些的清水,下手给它清洗干净,把刮出来的粘液清洗掉,鱼肚子里面的黑膜也要给它刮掉,这个黑膜也是腥味的来源。

洗好之后给它放在案板上,然后再用刀给他两面打上一字花刀,这样能使鱼更快的成熟。

给它装入一个大碗中,加入葱姜,再来点高度白酒,先用手把葱姜汁给它挤出来,葱姜汁不仅可以去腥增香,而且还能使鱼肉更鲜嫩。

然后我们再用葱姜汁涂抹在鲫鱼的身上,尽量每一个地方都给它涂到。鱼肚子里面也要给它涂到。涂抹好之后,先放一边腌制15分钟。

接下来我们切点姜片,再给它切成姜丝。

准备两根小葱,给它切成小段。

准备一块嫩豆腐,先给它对半片开,然后再给它切成长条,最后给它切成小四方块。切好给他装入碗中备用。

再来准备一些白玉菇,先把头部切掉,然后再用手给它掰散,接着再给它放入清水中,下手给它清洗干净,洗好之后先给它放水里浸泡备用。

这时候我们的鲫鱼已经腌制好了,我们把上面的葱姜拿掉不要。

再用厨房纸把鱼上面的水分吸干,这样我们煎鱼的时候,油才不会溅得到处都是。

锅中水开后加入一勺食用盐,然后再把切好的豆腐放进来焯水。这样不仅可以去除豆腐的豆腥味而且还能提前入个底味,大约煮两分钟左右,再给他用漏勺控水捞出备用。

接下来我们先把锅烧热,然后再加入少许的食用油,用铲子把油浇到锅边,使锅的每一个地方都能吃到油,这样我们煎鱼的时候才不会粘锅。

油烧热之后,我们再把鲫鱼放进来,刚放进来的鱼先不要去动它,先给它煎至定型,然后就可以随便的晃动锅啦,这时候就不担心鱼会粘锅了。

煎至一面金黄之后,我们再把另一面翻过来,把鲫鱼的两面全部煎至金黄,这样我们做出来的鲫鱼汤才会更香。

接着我们再把葱姜放进来,继续用铲子给它不停的翻炒,把上面的水分炒干一些,这样我们做出来的鲫鱼汤也会更加的香。

然后我们再加入适量的开水,这里我们需要注意的是一定要加开水,加冷水做出来的鲫鱼汤就不会那么白,这也是饭店的鲫鱼汤浓白的关键。

煮出来的浮沫我们用铲子给它打掉,然后开中小火慢慢的给他熬,把鲫鱼的营养全部释放出来,这里我们给它熬15分钟左右。

看到锅里的汤明显变白的时候就可以了,这时候我们准备一个密漏勺,把锅里的鱼渣全部捞出来,然后再用铲子给它按压一下,把鱼渣上多余的鱼汤按压出来,剩下的鱼渣也不要丢了,用来给家里的猫或者狗吃。

最后我们再把它过滤一遍,这样才能完全去除鱼刺。

接着再把过滤好的鱼汤倒回锅中,煮开后先把豆腐放进来,白玉菇也给他放进来,先给他们煮个三分钟左右。

然后再把青豆放进来,继续给它煮一分钟左右就可以了。

调味我们只需要来点盐,一点点胡椒粉去香增腥,再来一点白糖提鲜。用勺子给它充分的搅拌均匀。

最后出锅之前撒入一些枸杞,这样我们一道鲫鱼汤就做好了。
